I’ve always been that blogger, or blog reader, that didn’t really eat oats. I tried instant oats a few times during college, but they were never really my favorite. I generally prefer a lighter breakfast, as you can tell by my usual smoothie obsession. However, between working and working out, I’ve been wanting something a bit more substantial lately. Something that will last me from now (10ish) until my first break at work, around 2 o’clock. Oats have been the answer to this during the last week, and I’m finding that I’m really enjoying all the fun flavor combinations I can make!
Tto celebrate the autumny weather, I decided to create a new oat dish, inspired by fall. I also included a protein boost for some extra workout recovery.
Apple Cinnamon Oats
- 1.5 cups almond milk
- 1/2 cup Bob’s Red Mill steel-cut oats
- 1/2 cup applesauce
- 1 T ground flax seeds
- 1 T plain protein powder
- 1/2 t cinnamon
- 1/4 t nutmeg
1. Add almond milk and oats to a sauce pan, and bring to a boil.
2. When a boil is reached, turn down the heat to medium-low, and continue to simmer, stirring occasionally.
3. After about five minutes, add the remaining ingredients, and mix well. Simmer for about 15 more minutes, or until it reaches the desired consistency.
This is love in a bowl. So warming and comforting on a gray day!
